
Mijin is essentially a shorter version of Matsugae. It is created in the same way, but cut into smaller pieces. As such, it is the perfect condiment to go with rice dishes, Japanese style soups or as a stand alone supplement to a wide variety of dishes. Recently, foreign chefs have also been using Mijin in pasta and salad dishes to bring kombu umami into these, as well as in traditional rice dishes.
Ingredients: Japanese ma-kombu (second year kombu), soy sauce, L-glutamic acid
